You didn"t tell us how to mix the pastry ingredients.
Is the egg water added at the end? All of It?

This appears to be the same recipe my mother taught me (and her mother taught her)—it's very flaky and delicious. Mix dry ingredients, cut in lard, beat egg, vinegar and water together until all froth, then mix into flour mixture. Knead gently and roll out on well floured board.

This recipe is particularly excellent for pies with wet fillings.
